Ginger & Garlic chicken meatball curry

CURRY + MEATBALLS

Ingredients

Curry Sauce

1 tbsp of avocado oil (or ghee)

1 medium onion, diced

4 cloves of garlic, sliced

1 tbsp of ginger, grated

1 medium sweet potato, cubed

2 tsp curry powder

1 tsp garam masala

1/4 tsp turmeric

1/2 tsp of salt

dash of pepper

18oz or 1 can of organic diced tomatoes (I use Jovial in a glass jar)

1 can of coconut milk

Meatballs

1 package of organic ground chicken (or ground turkey)

4 cloves of garlic, grated

1 tbsp of ginger, grated

2 tbsp coconut aminos (or soy sauce)

1/4 salt

dash of pepper

1 tbsp of avocado oil

Directions

Curry Sauce

In a medium deep pan on medium heat, add avocado oil. Then add in the onions, garlic, and ginger. and cook for 3-5 minutes. Then add the sweet potato and cook for another 3-5 minutes. Add in the spices (curry powder, garam masala, turmeric, salt, and pepper) and stir and cook for about 3 minutes. Add in the tomatoes and let them cook for 5 minutes. Finally, stir in the coconut milk, turn the heat to low, cover the pan, and let it gently simmer for 30 minutes (while you make the meatballs).

After 30 minutes, you can blend the sauce with an immersion blender or in an actual blender. I do not have either at the moment so I left mine as it was. It’s still delicious but I do prefer it blended if you have the equipment available ;)

Meatballs

In a large bowl, add your ginger, garlic, ground chicken, coconut aminos, salt, and pepper, and give everything a mix. If your mixture seems dry you can always add an egg. Roll mixture into 1-inch balls and set aside. In a large pan on medium heat add in your oil and wait for it to get hot. Then add in your meatballs (I usually cook half of them at a time so I don’t crowd the pan). Cover the pan and cook for 3 minutes, then flip the meatballs and cook for another 3-5 minutes (until chicken is cooked through).

Once all of your meatballs are cooked, place them into your curry sauce for 5-10 minutes with a lid on the pot. Make sure your sauce is not too hot here, you don’t want to overcook the meatballs.

Serve over rice, quinoa, baked veggies, cauliflower rice & top with some cilantro.
