Banana - Chocolate Chip Muffins
The gluten free, dairy free muffins OF YOUR DREAMS
Ingredients
WET
2 bananas, mashed
2 eggs
1/4 cup of maple syrup
3 tbsp of avocado oil (or coconut oil, melted)
3 tbsp of almond milk (or any nut milk)
2 tbsp of almond butter
1 tsp of vanilla
DRY
2 cups of almond flour
1/4 cup of tapioca flour
3 tbsp of ground flaxseed
1/2 tsp of baking soda
1/4 tsp of salt
*optional 1/4 tsp of ground cinnamon
1/3 cup of chocolate chips
Directions
First, heat your oven to 350F. In a bowl, mash your bananas, then add the rest of the wet ingredients until everything is well combined. Then add all of your dry ingredients and stir until combined. Add in as many chocolate chips as you’d like.
Line a muffin tin and fill each cup about 3/4 of the way full. Place in the oven and bake for 15-20 minutes, until a toothpick comes out clean.
